August is totally a month of anniversaries in my life. I talked on Friday about my 5 year anniversary of moving to Raleigh, and next Monday is another special day that I’ll talk more about when the time comes.
Today though, I want to talk about the day that I first met TJ, which was exactly four years ago, on August 6, 2009. It’s weird to think about a time before I knew my husband, but 4 short years ago, I walked into a brand new job, completely unaware that he existed. I was nervous as I was taken around the office being introduced to everyone, but not because I was about to meet my husband (if I would have known that little fact, I probably would have passed out!), I was just full of regular first-day-at-a-new-job nerves.
I still remember the exact moment that I saw his face for the first time – a face I know every inch of by memory now – and honestly my heart skipped a little bit. There was just something about him that made me nervous and excited, and it was feeling that I’d never felt before. Maybe somewhere deep down I knew that he would become someone special to me, or maybe I was just nervous because he was so cute. Either way, August 6, 2009 changed my life forever, and I’m absolutely thrilled about it.
I’m all about celebrating the little things in life, and I believe that the day I met my future husband deserves to be celebrated. Our yearly tradition is to make these Buffalo Chicken Bites, and just think back to that day, talking about the little memories that stand out to us. It’s simple and wonderful, and I look forward to keeping the tradition alive for many years to come.

Makes 15 – 20 bites
ingredients:
2 cans shredded chicken
1/2 cup Buffalo sauce
4 oz cream cheese, softened
2 cups cheddar cheese, shredded
2 tsp Ranch dressing powder mix
1 tsp onion powder
1 cup flour
2 eggs, beaten
3 cups Panko breadcrumbs
instructions:
Combine the chicken and Buffalo sauce in a large bowl.
Stir in the cream cheese until thoroughly combined.
Stir in the cheddar cheese, Ranch dressing powder, and onion powder.
Set out three bowls, one for the flour, one for the eggs, and one for the Panko breadcrumbs.
Use a small ice cream scoop to form a ball out of the chicken mixture, and dip it in the flour, then eggs, then breadcrumbs; place on a foil lined baking sheet.
Bake at 350 for 25-30 minutes, broiling for the final few minutes to get them extra crispy on top.
Serve with additional Buffalo sauce for dipping and enjoy!

Dropping in by way of Kisses and Croissants and this look delish and SO much easier than the way we make our chicken “nuggets”! Although I’m not a fan of spicy foods, we must try this soon.. and who doesn’t love panko!!
