I can’t believe the first quarter of 2016 is nearly over! I’m convinced time goes a little bit faster every single year. It’s also time for another Secret Recipe Club reveal day! This month, I was assigned Casa Costello, written by Helen, who is living with her family in the UK! Helen’s blog is full of so many yummy baked goods that had me absolutely drooling. I can’t wait to make her White Chocolate and Raspberry Swiss Roll, Ginger Oat Chewy Creams, and Homemade Naan Bread.
For this month’s post, I decided to go with her Celebration Popcorn! TJ and I have been binge-watching Lost (I know, we’re about 10 years behind, but no spoilers, please!) since the beginning of February, and we’ve been so caught up in the storyline that it’s taking nearly all of our free time. And well, what goes better with binge-watching than delicious popcorn, right? This recipe has some of my favorite ingredients: popcorn, white chocolate, and marshmallows, so I knew it would be a hit.
If you do nothing else this week, may I suggest planting yourself on a cozy couch in front of a great TV show with a bowl of this delicious popcorn? You won’t be sorry!

Makes a lot of popcorn
ingredients:
1 tbsp oil
2/3 cup unpopped popcorn kernels
2 oz white chocolate
1/2 cup mini marshmallows
salt, to taste
instructions:
Place oil in a large pot and turn heat up to high. Place one popcorn kernel in the pot and cover with a lid. Once the kernel pops, pour in the rest of the kernels, cooking over high heat until the popping slows to a stop.
Melt the white chocolate in a microwave-safe bowl in 30 second increments, stirring after each round, until smooth. Use a rubber spatula to stir the melted chocolate into the popcorn.
Melt the marshmallows in a microwave-safe bowl for 15-20 seconds, until puffy and starting to melt. Quickly stir the marshmallows into the popcorn until mixed thoroughly. Lightly salt, if desired. Serve and enjoy!

I’m not normally a fan of sweet popcorn, but I’m intrigued by this idea. I can’t imagine how messy/sticky it must be, but it doesn’t look it at all. Great SRC post!
