I can’t believe it’s already time for the next Secret Recipe Club day! And also, how are we just a little over a week away from Thanksgiving?! Time is crazy. This month, I was assigned Join Us, Pull up a Chair, which is an awesome food blog written by Heather. She has a huge (and impressive) recipe index, and there are so many yummy recipes that I want to try from her blog. The top 3 recipes that are on my list? Baked Turkey Meatballs and Spinach, Garlic Feta Dip, and Slow Cooker Italian Chicken Soup.

When it came time to choose what I should make this month, I almost went with one of her delicious looking pumpkin recipes (it is November, after all!), but I went with these Lemon Butter Cookies instead. You see, my husband, TJ, is turning 30 (!!) on the 27th of this month, and he LOVES anything and everything lemon. So, I thought it’d be nice to make him an early birthday treat.

These cookies are delicious – lemony, nice and chewy, and just an all-around tasty, simple cookie. Oh, and they are 100% TJ approved.

Makes about 18 large cookies

ingredients:
1 cup butter, softened
1 1/2 cups powdered sugar
1 egg
1 tbsp lemon juice
2 1/2 cups flour
1/2 tsp baking soda
1/2 tsp baking powder
1 tbsp lemon zest

instructions:
In the bowl of a stand mixer, beat together the butter and powdered sugar. Add in the egg and lemon juice and beat until fluffy. Slowly beat in the flour, baking soda, baking powder and lemon zest until well combined.

Line a baking sheet with parchment paper, and use a large scoop to form the dough into balls.

Bake at 350 for 12-14 minutes, or until the edges of the cookies are just starting to brown.

Allow to cool on a wire rack and enjoy!
