Chewy Oat Bars

One of my favorite things to do in the kitchen is to try making homemade versions of store bought foods. Case in point? These Swiss Cake Rolls. I came across this recipe for these chewy oat bars in one of my mom’s old cookbooks, and they sounded just like a Chewy bar, so I immediately wanted to make them. TJ and I have been calling them granola bars, but since there’s not actually any granola in them, I changed the name to “chewy oat bars” – that works, right? Also, I decided to add peanut butter chips and chocolate chips to them, because really, who doesn’t their pseudo granola bar to taste like a Reese’s cup?

ingredients:
1/2 cup butter
1/3 cup sugar
1/3 cup honey
1/4 cup flour
1/2 tsp vanilla
1/4 tsp cinnamon
2 cups Rice Krispies
2 cups quick oats
1/2 cup peanut butter chips
1/2 cup chocolate chips (I used the mini ones because they’re adorable, and what I had on hand)

instructions:
Melt the butter in a large microwave safe bowl.

Whisk in the sugar, honey, flour, vanilla, and cinnamon.

Stir in the Rice Krispies and oats.

Stir in the peanut butter chips and the chocolate chips.

Line a 13×9 inch baking dish with foil and spray with cooking spray. Spread the mixture into the pan, and use a piece of wax paper to press the mixture firmly into the pan.

Bake at 350, for 10 minutes.

Let cool in the pan for an hour, and then cut into rectangular bars.
