Today’s Secret Recipe Club reveal marks my one year anniversary of being in the club! As they say, time flies when you’re having fun, right? This month, I was assigned Debbi Does Dinner… Healthy and Low Calorie written by Debbi, aka Group C’s fearless leader! As always, I had a hard time deciding what to make, because there are so many yummy choices in her recipe index: her Cheese Ravioli with Onion Butter Sauce, Caramel Sticky Buns, and Honey Lime Enchiladas are all now on my “to make” list.
But, when I saw that she had a recipe for homemade Butterfingers on her blog, and they require candy corn, I knew I just had to make them. I mean, what perfect timing right? So yeah, these homemade Butterfingers are delicious! They don’t have the crunch that a store-bought Butterfinger has, but the taste is totally on point. Plus, they’re very easy. As in, almost easier than going to the store to buy one. I say, skip the trip down the candy aisle for discounted Halloween candy in a few weeks and just make these instead.
Printable Recipe
Makes about 25 squares
ingredients:
1 lb candy corn
1 lb peanut butter
1/2 lb chocolate candy coating
instructions:
Pour candy corn in a large bowl and microwave for one minute. Stir and continue melting in 15 second intervals, stirring each time.
Stir in the peanut butter. Work quickly, as the candy corn starts to harden pretty fast.
Line an 8×8 pan with parchment paper and pour the mixture into the pan.
Let cool completely. Lift out of the pan and leave on the parchment paper. Melt chocolate candy coating in a microwave safe bowl according to package instructions. Spread the chocolate over the top and sides of the candy corn mixture.
Allow the chocolate to harden, then cut into squares.
