Spinach and Feta Chicken Quesadillas

Man, how great are the Fridays right before you have something super exciting going on? TJ and I are going to Charlotte this weekend to go to the Panthers/Steelers game, and obviously, I am SO EXCITED. Let’s just ignore the fact that the Panthers are heavily favored to win, and that every game TJ and I have been to together, the Steelers have lost. See, I have an unbridled hope that they’ll win, and I’m not giving up on that until the last minute of the game is played.

Anyway, let’s talk about these Spinach and Feta Chicken Quesadillas, which just so happen to be an amazing thing to eat while watching football. I wonder if I can get Bank of America stadium to start serving these so I can have them on Sunday night? It tastes a lot like this dip that I shared a couple years ago, but with chicken mixed in, which makes it even more delicious. Of course, if you want to keep it meatless, you can keep the chicken out, and it will still be good!

Serves 2

ingredients:
4 oz cream cheese, softened
1/4 tsp garlic powder
salt and pepper, to taste
5 oz frozen spinach, thawed
2 tortillas
2 oz feta cheese
1/2 cup shredded chicken

instructions:
In a small bowl, stir the garlic powder, salt, and pepper into the cream cheese.

Divide the cream cheese mixture between the two tortillas and spread in a thin layer.

Fold the tortilla over and place in a small skillet. Cook over medium heat, about 3 minutes on each side, or until the tortilla is golden brown on each side.Spinach-and-Feta-Chicken-Quesadillas-010

    These look delicious! We ate at Olive Garden for dinner tonight and it’s always so filling. The sight of food alone is making my stomach ache even more lol. I’ll definitely be giving these a try sometime this week. They look so simple and easy.
