Happy Friday! Since TJ and I both started working for ourselves, we’ve instituted a “no alarms on Fridays” rule that makes them just a little sweeter. Sure, we’re still usually up by 7 or 7:30, but we don’t have to be, and that makes all the difference, right? Honestly, I’ve been feeling a little checked out from the blog world lately, and I hate it. I’m behind on responding to comments (I’m really sorry and I hate myself for it), behind on reading blogs, and behind on commenting on other blogs. Honestly, I just get my own posts scheduled and then get busy during the week. Which is a good problem to have, I guess, but it still is a little draining. Hopefully this weekend I can start getting caught up on everything! Bear with me a bit longer?

So, let’s talk about these bars. I was at the grocery on Wednesday, and out of nowhere, these Birthday Cake Blondies popped into my head. Suddenly, I just felt like I HAD to try making them with a red velvet cake mix, so I popped on over to the baking aisle, and I picked up the mix, and I came home and made them. I gotta say, they are GOOD! I didn’t think they’d quite be able to live up to the birthday cake version, but they really did. So gooey and just absolutely perfect. Please, make them this weekend – you won’t be sorry.

Makes about 16 bars

ingredients:
1 box red velvet cake mix
1/4 cup vegetable oil
1 egg
1/4 cup milk

instructions:
In a bowl, mix together the cake mix, vegetable oil, and egg.

Stir in the milk until fully combined and the lumps in the batter are gone.

Pour the batter into an 8×8 pan lined with foil.

Bake at 350 for 20-25 minutes, until the top has a nice cooked “crust”. It may seem like they’re not fully done in the center, but it’s important to let them sit in the pan for 30-45 minutes (or until completely cooled) before cutting them to let them firm up, while still remaining nice and gooey.

After you’ve let them cool completely, cut into bars and enjoy!
