You know how we all have certain junk foods that we can turn down easily? Chocolate ice cream is a big one for me, as well as most pies and cobblers. They don’t appeal to me at all – seriously, give me carrots over chocolate ice cream any day. But then we all also have certain junk foods that we can almost never say no to, and for me that’s vanilla cake.
I’ve had this blondie recipe on my list of things to make for a while now, and I finally busted them out for game night on Saturday. They’re the perfect, gooey bar that tastes just like a fresh vanilla cake, and they take so much less effort to put together. They’re pretty much my definition of bliss.

Makes 1 8×8 pan of blondies
ingredients:
1 box funfetti cake mix
1/4 cup vegetable oil
1 egg
1/4 cup milk
instructions:
In a large bowl, mix together the cake mix, vegetable oil, and egg.
Slowly stir in the milk, stirring until just combined.
Spread the batter into a foil-lined 8×8 baking pan.
Bake at 350 for 20-25 minutes, or just until the top is golden brown. It may seem like they’re not fully done in the center, but it’s important to let them sit in the pan for 30 minutes before cutting them to let them firm up, while still remaining nice and gooey.
After you’ve let them cool for 30 minutes, cut into bars and enjoy!
