Southwestern Chicken BurgersOne of my favorite things about cooking is getting to try out new types of food that I’ve never eaten before. Last weekend, I bought ground chicken for the first time, and we used it to make these burgers, which turned out to be incredibly delicious! (We also used it to make Italian meatballs to go with spaghetti – SO good).

These burgers have a nice little spice to them, and they kind of taste like a chicken taco in burger form. We had some chips and salsa on the side, and it made for a great dinner. I think it’s safe to say that buying ground chicken will become a regular thing for us now, and I can’t wait to try making other delicious stuff with it.

Makes 2 burgers

ingredients:
1 small egg, slightly beaten
1/8 cup tortilla chips, finely crushed)
1/4 tsp chili powder
1/4 tsp cumin
dash of salt
dash of pepper
1/2 lb ground chicken
2 slices pepperjack cheese
2 hamburger buns, toasted
salsa, for topping

instructions:
In a medium bowl stir together the egg, tortilla chips, chili powder, cumin, salt, and pepper.

Add the chicken and mix well. The mixture will be wet. Shape into round patties, about 3/4 inch thick.

Cook the patties on the stove-top over medium-high heat, for about 10 minutes per side, until no longer pink in the center. If you’re using a meat thermometer, it should register 165 degrees.

Top with the cheese, then serve on the toasted bun, and top the burger with salsa.
