Vanilla Frappuccino Popsicles

I know, I know, it’s freezing outside just about everywhere, and yet I’m sharing a popsicle recipe. Have I lost my mind? I don’t think so, and here’s why – if you blast the heat in your house, it’ll be warm enough to enjoy a popsicle in the middle of December.

But really, these popsicles taste exactly like a vanilla frappuccino on a stick, and no matter what month it is, I think you’ll fall in love with them. If you’re wondering why they look more yellow instead of distinctly vanilla-y, it’s because they’re made with vanilla pudding, which we all know has a kind of yellow-ish hue. That’s how you know it tastes good.

Oh, and bonus? After filling your popsicle mold, you’ll likely have just enough pudding leftover for a delicious snack. And let me tell you, you might never eat regular vanilla pudding without coffee extract again. Addicting.

Makes 8 popsicles

ingredients:
1 (5.1 oz) box instant vanilla pudding
3 cups milk
2 tsp coffee extract
1/2 tsp vanilla extract

instructions:
In a medium bowl, whisk together all ingredients.

Whisk quickly for 2-3 minutes, until the pudding begins to thicken.

Pour the mixture evenly into a popsicle mold.
