Sometimes, in life, really great things are hiding in plain sight. You know what I mean? Like maybe you drive past the same little restaurant every day without really noticing it, but one day you decide to venture in, and boom, you just found your new favorite restaurant. Or maybe you see a blog button on tons of sidebars for a few weeks, and you finally decide to click on it, and boom, you’ve just discovered your new favorite blog.
Those little right-under-your-nose surprises in life are awesome.
Well, guess what? That’s how I discovered these cookies. I found the recipe on the back of a bag of peanut butter chips. I’ve purchased countless bags of those chips in my life, and for whatever reason, I never paid any attention to the recipes on the back before. Then all of the sudden, boom, I just discovered one of my new go-to cookie recipes.
Moral of the story? Keep your eyes open for little things that you usually would gloss over. You just might surprise yourself with what you discover. Boom.
Printable Recipe
Makes about 24 large cookies
ingredients:
1 1/4 cups butter, softened
2 cups sugar
2 eggs
2 tsp vanilla
2 cups flour
3/4 cup cocoa
1 tsp baking soda
1/2 tsp salt
10oz pkg peanut butter chips
instructions:
Beat the butter and sugar in a large bowl until fluffy.
Beat in the eggs and vanilla, until fully incorporated.
Combine the flour, cocoa, baking soda, and salt in a small bowl.
Gradually add the flour mixture into the butter mixture, beating completely.
Stir in the peanut butter chips.
Use a large ice cream scoop to form balls of dough onto a prepared baking sheet.
Bake at 350 for 12-15 minutes.
Cool completely on a wire rack, then enjoy!
