White Chocolate Oatmeal Cookies

Nothing says “fall is upon us” quite like the smell of cinnamon and nutmeg wafting through your house on a cozy Saturday afternoon. While these cookies were baking, thoughts of the coming cool days and holiday season were dancing in my happy little head. I’m so excited that this time of year is here, and I intend to savor every last second.

Just as their scent suggested, these cookies also taste like fall. I’m not even sure how to explain that, but I guarantee that if you take a bite of these, you’ll know exactly what I mean. I had originally intended to just make regular oatmeal cookies, and then at the last minute, I decided to throw in some white chocolate chips. Trust me when I say that the chips are a very important component!

Makes 24-30 cookies

ingredients:
1 1/4  cups butter, softened
3/4  cup brown sugar
1/2  cup sugar
1  egg
1  tsp vanilla
1 1/2  cups flour
1  tsp baking soda
1  tsp cinnamon
1/2  tsp salt
1/4  tsp nutmeg
2  cups quick oats
1 cup white chocolate chips

instructions:
In a large bowl, beat the butter, brown sugar, and sugar until creamy.

Beat in the egg and vanilla.

Add in the flour, baking soda, cinnamon, salt, and nutmeg and beat thoroughly.

Stir in the oats…

…and the white chocolate chips.

Use an ice cream scoop to form balls of dough, and place on a prepared baking sheet.

Bake at 375 for 9-10 minutes, or until the edges are golden.

Cool on a wire rack and enjoy!

Best served with a cold glass of milk, of course.
