Poppy Seed Chicken

First of all, can we just talk about how hard it is to take a picture of a casserole and actually make it look appetizing? It’s near impossible. That being said, TJ totally gets a shout out because he managed to capture the pure deliciousness of this dish. TJ, thanks for being so awesome 🙂 Just look at all the details here – little specks of poppy seeds, crispy flecks of Ritz crackers, and chunks of chicken, all mixed together in a creamy goodness. This, my friends, is comfort food at its finest, and it’s perfect for the cool Fall days that are on the horizon. You know what makes it even better? It’s way lightened up by substituting Greek yogurt for sour cream, and using the heart healthy cream of chicken soup. Happy first day of Fall – bring on the cool evening walks, warm cups of coffee, gorgeous trees, and hearty casseroles.

ingredients:

1 can shredded chicken
1 can heart healthy cream of chicken soup
8oz plain, non-fat Greek yogurt
1 tsp paprika
1/2 tsp garlic powder
1/2 tsp onion powder
1 tbsp poppy seeds
1 sleeve Ritz crackers

instructions:
After you’ve preheated your oven to 350, and lightly sprayed a casserole dish with cooking spray, throw your chicken into a medium sized bowl.

Add in the soup…

…and the Greek yogurt.

Then sprinkle in your paprika.

And your garlic powder.

Don’t forget your onion powder!

Add in 1/2 tbsp poppy seeds.

Then crush in half a sleeve of Ritz crackers.

Stir it all together, until it’s nice and combined.

Pour the mixture into the prepared casserole dish, and smooth it evenly.

Top with the remaining crackers and poppy seeds.

Bake for 25-30 minutes.

Serve and enjoy! Broccoli is our favorite side for this dish – if you’re feeling crazy, you can even throw some broccoli in with the casserole.
