The first day back at work after a long weekend is so hard – am I right? My morning seemed to crawl by, and the afternoon wasn’t much better. The bright spot is that there are only three more work days until the sweet weekend is upon us again. Don’t get me wrong – I’m very lucky to enjoy my job, but still, 3-day weekends never seem quite long enough!
You know what makes a long work day a little bit easier to get through? Knowing that you have an easy and delicious meal to have for dinner. You can whip up this little pasta dish is less than 15 minutes, but it seriously tastes like a gourmet meal. That’s right, this dish can make your first day back at work after a long weekend a little less dreadful. That, my friends, is a win.
Serves 2
ingredients:
4 oz fettuccine noodles
3 oz baby spinach
1 tsp minced garlic
1 tbsp olive oil
1/4 lb medium shrimp, peeled and deveined
1/4 tsp Italian seasoning
salt, to taste
Parmesan cheese, for garnish
instructions:
Cook the fettuccine according to package directions. Meanwhile, saute the spinach in the oil over medium heat until the spinach begins to wilt.
Add in the garlic, shrimp, Italian seasoning and salt.
Saute for 2-3 minutes until the shrimp turns pink. Drain the fettuccine and top with the spinach and shrimp mixture, then top with the Parmesan cheese.
