Strawberry Chocolate Fool

Happy Valentine’s Day! I hope you celebrate today with lots of love – whether it’s romantic love, friendly love, or familial love. If you need a last minute dessert for tonight, this light and sweet fool is the one to make. In its simplest form, a fool is whipped cream and mashed fruit. I’ve never made one before, but after seeing how easy it is, I can’t wait to try it in all kinds of different variations. Possibly a new fool for April Fool’s Day? Time will tell!

ingredients:
2 oz chocolate bar
2 cups strawberries, sliced
1/3 cup sugar
1 tsp vanilla
pinch of salt
3/4 cup heavy whipping cream

instructions:
Thinly slice the strawberries.

Bonus points if one of the stems looks exactly like a heart.

Place 3/4 cup of the strawberries in a bowl. Add in the sugar, vanilla, and salt.

Combine together, mashing the strawberries in the process. Chill for 30 minutes to an hour.

While the strawberry mixture is chilling, finely chop the chocolate bar.

Use a stand mixer to beat the whipping cream until peaks form.

Gently stir in the strawberry mixture and the chocolate.

Prepare the fool by alternating layers of the cream mixture, and the remaining sliced strawberries in a serving glass.

Top with a strawberry and enjoy!
