I’m posting this recipe today instead of Friday because I’m participating in another linkup tomorrow. Two in one week! I’m going linkup crazy, and I think I like it. Tomorrow’s linkup is an accent vlog, and it was actually pretty fun to make.
Anyway, let’s talk about these tacos. In short, they are SO good! The chicken is spicy and really lime-y, and it’s extra good on chips as nachos too. I made my homemade flour tortillas and they ended up being the perfect vehicle for this chicken. The best part is that the slow cooker does all the work for you on this chicken. Throw it in before work and it’ll be done when you get home. Really, I think this might be my new favorite taco, and that’s saying a lot. Seriously, you’ve got to give these a try – soon!

Serves 4
ingredients:
2 boneless skinless chicken breasts
juice of 2 small limes
1/2 tsp cumin
1/2 tsp garlic pepper
1/2 tsp onion powder
1/4 tsp cayenne pepper
1/4 cup salsa
4 tortillas
toppings such as cheese, lettuce, cilantro, etc
instructions:
Line the slow cooker with a plastic liner and place the chicken breasts inside.
Add in the lime juice, cumin, garlic pepper, onion powder, and cayenne pepper. Turn the chicken over to blend the lime juice and the spices and fully coat the chicken.
Cover and cook on low for 5 hours, turning over halfway through.
Place the chicken on a plate and use two forks to shred.
Pour the remaining juice from the crock pot onto the chicken and mix well.
Pour the salsa onto the chicken and mix together.
Divide the chicken between the tortillas and top as desired. Enjoy!
