I absolutely love zucchini, whether it’s an addition in stir-fry, shredded into a sweet bread, or as the main ingredient in vegetarian fajitas. Now that it’s in peak season, I intend to eat it as much as possible over the coming months.
This Garlic Oregano Zucchini is a simple side dish that explodes with flavor, and comes together in only a matter of minutes. We served this as a side for burgers (more on that recipe on Friday!), as a healthier alternative to French fries or chips.
