Now that we’re halfway through May, I think we’re officially in burger season. TJ and I love grilling out during the summer, and while we like mixing it up with different meats, burgers are definitely one of our default choices. TJ’s specialty is these Jalapeno Burgers, and I like to kind of mix it up and try different things out with them.
These Cheese-Stuffed Salsa Burgers kind of taste like a taco, mostly because of the seasonings in the ground beef. The oozing cheese in the center of the burgers is the star here, and I think the pepper jack complements the seasonings nicely. All in all, I think these are a new favorite in our house!

Serves 2
ingredients:
1/2 lb lean ground beef
1/4 cup medium salsa
1 tsp chili powder
1/4 tsp salt
1/4 tsp cumin
1/4 tsp onion powder
dash pepper
4 small slices pepper jack cheese
2 hamburger buns, toasted
instructions:
Set the oven to broil. In a medium bowl, mix together the beef, salsa, powder, salt, cumin, onion powder, and pepper.
Shape the meat into 4 very thin patties.
Place two small slices of cheese on two of the patties.
Top each with the remaining patties and seal the edges.
Line a lipped baking pan with foil and lightly spray with cooking spray, then place the burgers on the pan.
Broil for 12-15 minutes, turning once halfway through, until the burgers reach desired doneness.
Place on the toasted bun, top as desired and enjoy!
We served ours with Garlic Oregano Zucchini and it was great together!

I have NEVER though to cook burgers in the oven. OR fill them with cheese. OMG I need a cheeseburger right NOW!!!!!!!!

I’ve never made them in the oven like that before either, but I loved it. It was nice and easy, and they were incredibly juicy! And stuffing them with cheese is a MUST 🙂

This solves two problems – I hate cleaning the grill and I also dislike standing there and watching the meat cook, so oven cooking = win. The second problem is that thick hamburgers just aren’t appealing to me – so the cheesy inside will be fantastic. I am not a big fan of spiciness (yes, I am a food wimp) so I would probably swap out the cheese for another variety. Thanks for the idea!

Lynne, I am with you on hating to clean the grill and standing over the meat while it cooks – cooking them in the oven was a dream! I bet they would be great filled with Swiss or provolone cheese. You’ll have to let me know if you make them!
