Sometimes, I have a great story to tie into the recipe I’m sharing. Sometimes, I have a mediocre story that I can stretch to fit in with a recipe. And then there are times, like today, where I can’t think of much more to say than, “you should try this!” So, that’s where we’re at today – this quiche is spicy, delicious, and perfect for breakfast or brunch. Make it when you have a chance!

Makes 6 servings
ingredients:
2 cups taco blend cheese, shredded
1/2 cup milk
1/2 cup flour
8 oz cottage cheese
3 eggs, lightly beaten
2 tbsp butter, melted
4 tbsp jalapenos, finely chopped
salt and pepper, to taste
instructions:
In a large bowl, add all ingredients and stir to combine.
Pour the mixture into a 9×13 greased baking dish.
Bake at 375 for 40 minutes, or until the top is slightly golden and the eggs are set.
