I’ve mentioned it over and over again, but TJ is obsessed with Buffalo sauce. He’s from upstate New York, so I suppose he’s got the spicy orange sauce flowing through his blood. I never really grew up eating it, but over the last 4 years that we’ve been together, I’ve grown to really like it too. I won’t put it on everything, like TJ will, but I do really enjoy coming up with new ways to incorporate it into recipes.
I threw these together for dinner one night last week, and while the concept is far from unique, we couldn’t get over how delicious they were. Suffice it to say, they’ve officially been added to our rotating meal plan.

Serves 2
ingredients:
1 boneless, skinless chicken breast
1/4 cup Buffalo sauce
2 tortillas
mozzarella cheese, shredded
lettuce
ranch dressing
instructions:
Boil the chicken breast for about 15 minutes or until it is no longer pink in the center.
Use two forks to shred the chicken.
Pour the Buffalo sauce over the chicken and stir to combine.
Wrap the tortillas in a wet paper towel and microwave for 30 seconds to soften.
Divide the chicken between both tortillas and top with the cheese, lettuce, and ranch dressing.
