Two breakfast posts in a week from the girl who didn’t even like breakfast a few years ago. What is the world coming to? Like I mentioned last week, during the week, I’m all about something fast and easy for the first meal of the day. Muffins are one of my favorite grab-and-go breakfasts, since I can make them on the weekend, and have one every morning throughout the week. Typically, muffins are sweet, so I like that these are savory with a hint of garlic and little chunks of green onions.

Makes about 16 muffins
ingredients:
1/3 cup butter
4 green onions, chopped
1 clove garlic, minced
1 3/4 cups buttermilk
3 cups Bisquick mix
1 1/2 cups white cheddar cheese, shredded
instructions:
Melt the butter in a medium saucepan.
Add the green onions and garlic to the butter and cook for about 2 minutes.
Remove from heat and allow to cool for 2 minutes, then whisk in the buttermilk.
In a medium bowl, combine the the Bisquick mix and cheese.
Stir in the buttermilk mixture until the dry ingredients are completely moistened.
Use a large scoop to divide the batter among a lined muffin tin.
Bake at 350 for 25 minutes or until the tops are golden brown.
