I hope everyone out there with a loved one currently or formerly in the armed forces had a great Veteran’s Day! My dad was in the Navy for 22 years, and the military was very much a part of my life growing up. It’s definitely not a job that everyone can handle, so I greatly appreciate the people who can do it. TJ and I went out to dinner with my parents last night, and it was so fun to hear some of my dad’s stories from his Navy days. Special thanks to you, Dad, for serving.
Now, let’s talk about this ridiculously easy, but oh-so-delicious shredded chicken. I almost even feel bad posting it, because it’s so simple, but I know how much I love easy recipes, so I figure you guys might feel the same way. We’ve had this chicken in tacos, and on top of nachos, as shown above, and it’s tasty either way. We might just start making this regularly around here!

Serves 12-14
ingredients:
2 lb boneless skinless chicken breasts
1 12oz jar salsa
1 pkg taco seasoning
1 lime, juiced
1/3 cup cilantro, chopped
instructions:
Combine the salsa, taco seasoning, lime juice, and cilantro in a slow cooker. Add the chicken breasts and stir to cover.
Cook on high for 4 hours, until the chicken is tender and fully cooked. Use two forks to shred the chicken breasts.
Enjoy in tacos, nachos, or other favorite dishes!
