Fall has officially started and I’m so excited! The weather is starting to get cooler, the clothes are getting cozier, and the food is getting tastier. You see, I love pumpkin flavored fall food as much as the next blogger (although I’ve never had a pumpkin spice latte, if you can believe it), but my all-time favorite fall food is casseroles.
They’re so cozy and they warm you from the inside out. A tasty casserole is the ultimate comfort food, and you can usually live off the leftovers for a few days.
This particular casserole has all the components of chicken cordon bleu, mixed with some pasta and topped with a light stuffing – fall comfort food to the MAX.

Serves 6-8
ingredients:
1 box Stove Top stuffing
4 tbsp butter
1 2/3 cup warm water
10 oz whole wheat rotini noodles
12 oz shredded chicken
4 slices deli ham
1/2 tsp pepper
1 cup milk
1 can cream of chicken soup
1 cup Swiss cheese, shredded
1 cup Mexican cheese, shredded
instructions:
Combine the stuffing, butter and water in a bowl and microwave for 5 minutes, until the water is absorbed. Fluff with a fork.
