I have to be honest with you guys – sometimes I feel bad posting recipes that are this easy. Almost like really simple recipes aren’t quite blog-worthy. But then I rationalize posting them by thinking that if I love simple recipes so much, maybe you guys do too. So, we’re going to go with that, ok? Simple recipes are sometimes the best.
These incredibly simple pepperoni subs are something that my family has made for as long as I can remember. They’re inspired by the pepperoni subs from a little sandwich shop called Subby’s in my mom’s hometown of Dayton, OH. Whenever my parents and I would go up to Ohio to visit my mom’s side of the family, we’d make a trip to Subby’s and get pepperoni subs all around. It’s a recurring childhood memory that really sticks out in my mind, and when I make these subs at home, I’m instantly taken back to that little sandwich shop in Dayton.
Printable Recipe
Makes 2 sandwiches
ingredients:
2 hoagie rolls
8 slices deli pepperoni
2 slices provolone cheese
Italian dressing, to taste
instructions:
Lay out 4 slices of pepperoni on one side of each hoagie roll.
Tear each piece of provolone cheese in half, and place on top of the pepperoni.
Place the sandwiches on a baking pan, and broil for about 3 minutes, or until the bread begins to toast, and the cheese starts to melt.
Drizzle the sandwich with Italian dressing.
Enjoy!
Best served with a dill pickle.

My favorite post to date is entitled “Lucky Day”. I wrote it a couple months back when I was having a pretty rough day. Rather than dwell on the negative I decided to list out all the reasons that day was, actually, pretty wonderful. With a little thought and the right attitude you can always find the silver linings!
4. What’s the best thing about the state you live in?
I hail from Florida y’all and that means the beach! I can lay by the water, sip a cocktail, read a good book, all while getting my tan on almost year round. What about that doesn’t sound awesome?
5. If you could sum up your blog in one word, what would it be?
Positive!
