Spinach & Egg Strata
I got these adorable red ramekins from my mom a while ago, and I’ve been so excited to break them out for a new recipe. When I came across this tasty breakfast idea, I knew it would be the perfect opportunity to use the ramekins for the first time. You can make these the night before and just pop them in the oven when you wake up, which means they’d be a perfect Christmas morning breakfast.

4 slices of bread
2 handfuls of fresh spinach
2 eggs
3/4 cup milk
1 teaspoon minced garlic
1/2 teaspoon oregano
pinch salt and pepper
½ cup mozzarella cheese

Tear the bread into small pieces and place in the ramekins.

Chop the spinach and place on top of the bread.

Whisk together the eggs, milk, garlic, oregano, salt, and pepper.

Pour the milk mixture evenly over the bread and spinach.

Top with the cheese, cover with foil, and bake at 375 for 20 minutes.

Remove the foil and bake for another 15, until the cheese is starting to brown.Spinach & Egg Strata
