With the holiday season in full-swing, it’s important to have a few go-to recipes on hand for last minute gatherings. This corn & black bean salsa is one of my favorite appetizers, because you can throw it together in just a few minutes, or you can make it ahead of time and refrigerate before serving, giving you plenty of time to work on other items that are more time sensitive.

ingredients:
1 can sweet yellow and white corn mix, drained
1 can black beans, drained and rinsed
1 can Rotel tomatoes and chiles
1 bunch cilantro, finely chopped
3 green onions, finely chopped
1/2 tsp minced garlic
juice from 1/2 lime
1/2 tbsp pickled jalapeno juice
dash of cumin
