Breakfast has never been my favorite meal, mostly because I never feel like eating first thing in the morning. Even now, I wait to eat until right before I leave for work in the mornings. My stomach just needs some time to wake up before I fill it. Since I do wait until the last minute in the mornings, I was in the mood to make something that I could just grab and go with. I landed on these banana oatmeal chocolate chip muffins – the taste is delicious, and the addition of the oats makes them extra filling, perfect for holding me over until lunch without feeling the need to snack during the morning.
ingredients:
3 bananas, mashed
1 cup sugar
½ cup butter, melted
¼ cup milk
2 eggs
2 cups flour
1 tsp baking soda
½ tsp salt
1 cup quick oats
1 cup chocolate chips
instructions:
Place the bananas in the bowl of your stand mixer.
Use a fork to thoroughly mash them.
Add in the sugar, melted butter, milk, and eggs. Beat until combined.
Add in the flour, baking soda, and salt, beating until thoroughly mixed.
Stir in the oats and the chocolate chips.
Using a large ice cream scoop, fill the each baking cup with the batter.
Bake at 350 for 20-25 minutes, or until the tops are golden brown.
Enjoy with a cold glass of milk!

What if I add 1 or 2 tbsps of cocoa powder, will it ruin it ? 😛
