I mentioned here that I got an ice cream maker for Christmas and that I’d be sharing the first thing we made in it soon. Well, my friends, here it is: mint cookies and cream ice cream in all its smooth, minty, and slightly crunchy deliciousness. I really didn’t think that cookies and cream ice cream could be improved upon, but wow, using the Cool Mint Oreos did just the trick – this is extra delicious!

ingredients:
1 cup milk
3/4 cup sugar
pinch salt
2 cups heavy whipping cream
1 tbsp vanilla
20 Cool Mint Oreos

2 cups heavy whipping cream

instructions:
In a medium bowl, whisk together the milk, sugar, and salt, until the sugar has completely dissolved.
Stir in the heavy whipping cream and the vanilla.
Cover and refrigerate for about an hour.
Pour in your ice cream maker, according to the manufacturer’s instructions. While the ice cream maker is churning, grab your Oreos…
…and chop them into fine pieces.
Pour the cookies in at the suggested time (about 5 minutes before you stop the ice cream maker, in most cases). Freeze to desired thickness, and enjoy!
