Last week I was really in the mood for a simple stir-fry recipe, so I just started throwing things together to see what I could come up with. The end result turned out to be incredibly delicious! One of the best things about this recipe is that is extremely versatile. You could easily substitute in different vegetables, or even use steak or shrimp in place of the chicken. Anyway you make it, this simple dish is sure to please.
ingredients:
2 boneless, skinless chicken breasts, cut into small pieces
2 tbsp olive oil
1 bunch green onions, chopped
1 tsp minced garlic
1 small squash, chopped
1 small zucchini, chopped
1 bag microwavable brown rice
salt and pepper, to taste
soy sauce, to taste

instructions:
In a small skillet, add 1 tbsp olive oil, salt, pepper, and chicken. Cook over medium heat, until the chicken is white on the outside, but not completely cooked through.
In a large skillet, add 1 tbsp olive oil, the green onions, minced garlic, squash and zucchini. Lightly salt and pepper the veggie mixture.
Add in the chicken, and cook over medium heat until the chicken is cooked through, and the vegetables are tender.
Microwave the rice according to package directions, and add into the skillet mixture.
Add in soy sauce to taste, and mix until completely combined. Serve and enjoy!
