I’m a big fan of easy meals that don’t take much effort to throw together. After working all day, the last thing I want to do is spend hours in the kitchen, so I love stocking up on recipes that I can throw together in just a few minutes. This pasta dish falls perfectly into the weeknight meal category. It tastes like it took hours to make, but it comes together in just about 20 minutes. Also, it tastes kind of like an adult-version of macaroni and cheese, which is pretty awesome. So, even if it’s not a weeknight while you’re reading this, you should still probably plan to make this for your next meal. You won’t be sorry!

Serves 4
ingredients:
1 chicken breast, cut into bite-size pieces
1 heaping cup of broccoli florets, chopped
2 cups bow tie pasta
1 1/3 cups milk
4 tbsp flour
3 tbsp Parmesan cheese, shredded
2 tbsp cream cheese
2/3 cup Mexican cheese
1 tsp onion powder
1/2 tsp garlic powder
1/2 tsp ground mustard
1/4 tsp salt
1/4 tsp pepper
1/8 tsp nutmeg
instructions:
Cook the chicken in a small skillet, and season with Mrs. Dash, to taste.
Cook the pasta according to package directions, and add the broccoli for the last 3 minutes.
While the pasta is cooking, begin making the cheese sauce by cooking the milk and flour over medium heat. Whisk until smooth, and just slightly thickened.
