I’m closing in on 27, and yet I’m convinced that I’ll never get tired of chicken strips, even though I feel like I’m 12 when I eat them. They’re really just so delicious. When I make them at home, I always stick to baking them, to keep them a little bit healthier, but sometimes that can result in not-so-crispy strips.
These are a new favorite in our house, partly because they are really crunchy, and partly because they’re spicy. One of the best combinations! The corn chips here are a perfect exterior to this chicken, and now I kind of want to try making them again with a flavored corn chip. Living on the wild side, huh?

Serves 2-3
ingredients:
3/4 cup crushed corn chips (like Fritos)
2 tbsp Panko breadcrumbs
1 tbsp flour
1 1/2 tsp chili powder
1/2 tsp garlic salt
1/2 tsp Mrs. Dash
1/4 tsp pepper
1/4 tsp paprika
1 egg, beaten
2 boneless skinless chicken breasts
instructions:
In a small bowl, combine the corn chips, breadcrumbs, flour, chili powder, garlic salt, Mrs. Dash, pepper, and paprika. Mix thoroughly.
Cut the chicken breasts into strips, and set up the beaten egg in a bowl next to the corn chip mixture. Cover a baking sheet with foil and spray with cooking spray.
Dip the chicken one piece at a time in the egg and then cover completely in the corn chip mixture. Place on the baking sheet and spray the chicken with cooking spray.
Bake at 375 for 20-25 minutes, or until crispy and cooked through, turning halfway through.
