Mini Peanut Butter Cups

So, let me tell you the story of how these ended up in my fridge last week. A few weeks ago, mini Reese’s cups were on sale, so I grabbed a bag for TJ and I to have when we needed a little something sweet. Then last week, TJ was on his way home, and he called me to ask if I needed him to stop at the store for anything. I made a joke that we had just finished the bag of peanut butter cups and that it was tragic, but said that no, we didn’t really need anything.

Then I sat there while he was on his way home, and started to think that I should make my own. Because as unbelievably delicious as Reese’s cups are, everyone knows that homemade is always better. So, a few hours later, these were made and chilled, and we had quite a happy house. They really are better than store-bought peanut butter cups – I promise! They’re actually not very hard either. The longest part of making them is letting them chill before diving in. So, if you only make one thing this week, make it these!

Makes 24 mini peanut butter cups

ingredients:
12 oz chocolate chips
1 cup reduced fat peanut butter
1/2 cup powdered sugar
1/4 tsp salt

instructions:
In a small microwaveable bowl, melt half (6 oz) of the chocolate chips at 50% power for 1 minute. Remove from the microwave and allow to sit for a few seconds, as they will continue to melt during this time. Stir with a fork until fully melted.

Line a mini muffin tin with baking cups, and fill each one with chocolate. Use a spoon to fill the bottom of each cup, and bring the chocolate 3/4 of the way up the side of each cup.

Place the pan in the freezer for 15 minutes. Meanwhile, beat together the peanut butter, powdered sugar, and salt until fully smooth.

Fill each chocolate cup with a spoonful of the peanut butter mixture, and return to the freezer for another 15 minutes.

Melt the remaining chocolate in the same bowl as before, again for 1 minute at 50% power. Use a spoon to spread a layer of chocolate over each peanut butter cup, covering completely.

Freeze for a final 15 minutes, then enjoy! Keep refrigerated for maximum deliciousness.

    Those looks so good. I have a terrible addiction to Reese’s Cups as well…I never purchase them for that reason!
