These cookies were kind of an accident. A delicious, perfect accident, but an accident nonetheless. I started out making a slightly different recipe, but part of the way through, I realized that I didn’t have nearly enough flour, so I did some tweaking to what’d I’d already thrown together, and the improvisation turned into these cookies.
Oh these cookies! They’re not fancy or full of tons of flavor, but they’re so good. A little like a shortbread, but not quite. A little like a sugar cookie, but not as sweet. In short, they’re buttery, with just the perfect amount of vanilla.

Makes about 15 cookies
ingredients:
1/2 cup butter, softened
1/2 cup powdered sugar, plus additional for dusting
1 tsp vanilla extract
pinch of salt
3/4 cup flour
instructions:
In a large bowl, beat the butter, powdered sugar, vanilla, and salt until smooth.
On low speed, beat in half of the flour until just combined.
Knead in the remaining flour by hand.
Pull off 1-inch sections of dough and shape into balls. Space about 2 inches apart on a baking sheet.
Bake at 350 for 13-15 minutes or until the edges start to turn golden brown.
Place the cookies on a wire rack to cool.
Dust the tops of the cookies with powdered sugar.
