Cream of Broccoli Soup

I get that a new year seems like a clean slate, and that’s a good time for reevaluation, but I prefer to make “resolutions” (if you will), throughout the year, whenever I feel compelled to make changes in my life. For me, I’m more likely to stick to changes when I actually want to make them, instead of waiting for that magical January 1st date when I feel like I need to make them.

That being said, generally striving to live a healthier life is always a good thing, and it just happens to be on people’s minds this time of year, so I have a tasty and healthy recipe for you on this Friday morning! This cream of broccoli soup clocks in at only 110 calories for a cup, and it’s incredibly filling.

If this is what resolutions are made of, then maybe I could think about getting on board with them…

Serves 6-8

ingredients:
1 bunch broccoli (about 1 1/2 lb)
1/2 white onion
2 1/2 cups water
2 tbsp butter
2 tbsp flour
2 1/2 cups chicken broth
1/2 tsp salt
dash of pepper
dash of nutmeg
1/2 cup heavy whipping cream
shredded Parmesan cheese, for garnish

instructions:
Chop the broccoli and the onions, then set aside.

In a small saucepan, bring the water to a boil. Add in the broccoli and onions, cover and heat to boiling, then reduce to low heat. Simmer for about 10 minutes, or until the broccoli is tender.2014-1-2-014-edited

Use an immersion blender to puree the broccoli mixture, then set aside. If you don’t have an immersion blender, you can transfer the broccoli mixture to a blender and puree that way.

In a larger saucepan, melt the butter over medium heat.

Add in the flour, stirring constantly until the mixture is smooth.

Remove from heat and stir in the broth. Bring to a boil again, while stirring constantly, and boil for 1 minute.

Stir in the broccoli mixture, salt, pepper, and nutmeg and bring to a boil. Stir in the whipping cream and remove to heat immediately, so the soup does not curdle.

Top with the Parmesan cheese and enjoy!

    Love this! It’s hard to find a good broccoli soup recipe! And I can easily make the vegetarian with vegetable broth

    YUM! I have been obsessed with soup recipes lately because of this cold weather, but it’s definitely hard to find ‘light’ soups that are still yummy. I’ll be saving this one for sure!!
