Pork Chops and Rice

I’ve had this recipe on my list of “blog recipes to make” for soooooo long now. These Pork Chops and Rice are one of my mom’s famous family recipes. See, it’s always been one of my dad’s favorite meals, so I remember having it quite a bit while growing up. The funny thing is that I never liked it at all, until high school.

My mom made it one day, I griped a little about not wanting it, and then I tasted it and it was all of the sudden one of the best things I’d ever had. For years after that, I’d request this as my birthday meal, and when I came home to visit from college, I’d always ask her to make this. Overall, it’s a really simple meal, but it reminds me so much of home, so it’s extra special to me. I hope you’ll make it and bring a little piece of my home into yours!

Serves 2

ingredients:
2 boneless pork chops
1 tbsp olive oil
1/2 small white onion, chopped
1 garlic clove, minced
1 1/4 cup water
1 tbsp brown sugar
1/4 tsp salt
1/8 tsp pepper
8 oz can tomato sauce
3/4 cup uncooked long grain rice

instructions:
Salt and pepper both sides of the pork chops.

Heat the olive oil in a skillet over medium-high heat until hot. Add the pork chops to the skillet and brown, about 3-4 minutes per side. Set aside.

In the same skillet used for the pork chops, cook the onions and garlic over medium heat until tender.

Add in the water, brown sugar, salt, pepper, and tomato sauce and bring to a boil.

Add the rice to the tomato mixture and top with the pork chops.

Cover and simmer for 25-30 minutes, or until the rice is tender and the pork chops are cooked through.

Divide the rice between two plates, and top each one with a pork chop.

    YUM! I’m definitely saving this 🙂 We make porkchops a lot, but seem to always make them the exact same way every time, so I get bored with them. This sounds tasty though 🙂
