Chocolate Strawberry Shortcake
Since TJ and I met, we’ve definitely had a bit of influence on each other. For example, I’ve gotten him into football, and he’s gotten me into “tech” stuff like learning basic HTML. I’ve gotten him into TV shows like Arrested Development, and he’s helped me realize how cool helicopters are. I’ve helped him realize how delicious spicy food is, and he’s started to make me see that chocolate (while still less superior to vanilla) can be amazing.

Pre-TJ Ashley never would have gone for this Chocolate Strawberry Shortcake, but current Ashley loves it. It basically tastes like a chocolate covered strawberry in cake form. The cake itself isn’t very sweet, which is a nice balance to the sweet whipped cream and strawberries, but the crispy, sugary top of the cake is a nice touch. All-in-all, this is a perfect summer dessert, and is best served in the backyard after a long day in the sun.

Makes 10 shortcakes 

ingredients:
3 1/2 cups Bisquick baking mix
2/3 cup plus 2 tsp sugar, divided
1/2 cup cocoa powder
1 cup milk
1/3 cup butter, melted
1 egg white
30 strawberries
2 cups whipped topping
chocolate syrup for drizzling

instructions:
In a large bowl, combine the baking mix, 2/3 cup sugar, and cocoa powder.

Stir in the milk and butter until fully combined.

Drop the batter by 1/3 cupfuls onto a lined or slightly greased baking sheet, a couple inches apart.

Beat the egg white until foamy, them brush over the shortcakes. Sprinkle with the remaining 2 tsp of sugar.

Bake at 400 for 15-18 minutes, then allow to cool completely on a wire rack.

Once cooled, prepare each shortcake by splitting the cake in half.

Spread 2 tbsp whipped topping on the bottom piece of cake, then slice two strawberries and place on top of the whipped cream.

Top with the remaining cake half, then garnish with an additional tbsp of whipped topping, 1 whole strawberries, and a drizzle of chocolate syrup.

    Gorgeous and delicious! Strawberry shortcakes are my favorite but admittedly I’ve never made them in chocolate. I’ve done a blueberry shortcake before for the 4th of July and those always go over well. If I could convince my husband that chocolate wasn’t the Devil’s work I’d give these a shot. I’ll pin the recipe and wait for an occasion when I can make both vanilla and chocolate shortcakes.

      Thanks, Jules! Yeah, when we first met, I couldn’t believe that he didn’t watch football, but it ended up working out, because I was able to convince him that the Steelers are the best team, and now he’s a fellow fan 🙂
