Southwestern Black Bean Bites

Super-Bowl-Week1As I mentioned yesterday, today kicks off Super Bowl Week here on Rainstorms and Love Notes! I only really have one rule when it comes to serving food at a Super Bowl Party: it has to be easy to grab and go. The focus of the day should be the game – the food should just be a delicious accent. Serving finger foods is a good way to ensure that people can enjoy tasty snacks without turning their attention away from the game.

These Southwestern Black Bean Bites are kind of like individual nachos, where no chip is lacking any topping. They’re also a great vegetarian option on a day where chicken wings tend to reign supreme.

Makes 50-60 bites

ingredients:
50-60 unbroken tortilla chips
1 can black beans, drained and rinsed
1/4 cup hot salsa
1 tbsp cilantro, chopped
1 1/2 cup taco blend cheese
sour cream, for garnish
whole cilantro leaves, for garnish

instructions:
In a small bowl, combine the black beans, salsa, and chopped cilantro.

Arrange the chips in a single layer on a baking sheet. Spoon 1-2 teaspoons of the black bean mixture onto each chip.

Top each chip with cheese.

Broil for 3-5 minutes, or until the cheese is melted.

Garnish each chip with sour cream and a cilantro leaf and enjoy!

      Thanks, Jordan! I’m glad you like the easy stuff! I’m all about spending time in the kitchen making stuff, but I get so mad when it doesn’t turn out like I’m hoping. For me, keeping it pretty simple usually means it turns out right ๐Ÿ™‚
