Broccoli Cheddar Dip

Football Food Friday is back, after a two week hiatus! This week’s recipe is kind of like everyone’s favorite soup (broccoli cheddar, of course) in dip form. It’s creamy, full of little pieces of broccoli, and oh so cheesy. Which really, isn’t the cheese the best part? We served this with wheat crackers, but I think it’d also be great with tortilla chips, pita bread, or carrot sticks.

Makes about 12 servings

ingredients:
8 oz cream cheese, softened
8 oz Greek yogurt
1 envelope Italian dressing seasoning
8 oz frozen chopped broccoli, thawed and drained
8  oz cheddar cheese, shredded

instructions:
In a large bowl, beat the cream cheese, Greek yogurt, and Italian dressing seasoning until well blended.

Stir in the broccoli and 1 1/2 cups cheddar cheese.

Spread evenly into a baking dish.

Bake at 350 for 15 minutes, then top with the remaining cheese and bake for another 5 minutes, or until the cheese is melted.

Serve and enjoy!

1. Why did you start blogging?
I just thought it was a really neat idea. I was visiting Mal and we had a couple cocktails and I started asking her about her blog and I thought, “Hey! Why don’t I start one?!” and TADA! A few short weeks later my little gem was born.

2. What is your go-to dessert recipe? 
Its very fitting for the holidays it’s a pumpkin pie cheesecake that I’m obsessed with. I used to work at The Cheesecake Factory in Arizona and every year they would bring out the pumpkin pie cheesecake. So since my departure I have been searching for an awesome recipe and finally found one! It’s posted here.

3. Tell me about your favorite blog post to date.
Umm probably the one with my wedding pictures. Which is here. I was so excited to finally get to share with everyone how awesome everything turned out. Up to the wedding I had been sharing how the planning was going and what an awesome job my mother had done, so to get to share that was really special.

4. What’s the best thing about the state you live in?
I am not a huge fan of South Carolina but my favorite part is how crazy they go over college football. It’s like a national holiday every Saturday here when the Gamecocks play and I have become completely consumed by it.

5. If you could sum up your blog in one word, what would it be? 
Real. I don’t really hold back when it comes to my blog and will talk about pretty much anything. The only two things I won’t touch on is politics and religion. Other than that you will see my silly side or read about stuff that’s going on in my life.
