Loaded Baked Potato Snack Mix

It’s the last Friday before Thanksgiving, which for me, means the end of my last full week at work before a 5 day weekend starting next Wednesday. Since my mind is already starting to drift toward vacation mode (yes, yes, a few days early) I’m all about a super easy recipe today. This snack mix literally takes about 7 minutes to put together, 3 of which is just microwaving. So yeah, to say this is an easy recipe is even a bit of an understatement. This little snack mix has all the flavors of a traditional loaded baked potato – potato, cheese, bacon, and a hint of ranch. It’s tasty, and absolutely perfect for snacking on during football this weekend. In fact, you could even take 7 minutes of halftime to throw this together. I think we can all agree that’s the makings of a perfect Football Food Friday recipe!

Makes a ton

ingredients:
5 cups Chex cereal
4 cups shoestring potato chips
2 cups Cheez-Its
1/4 cup bacon bits
1/4 cup butter
1 package ranch dressing seasoning
1/2 cup Parmesan cheese, shredded

instructions:
Combine the Chex, potato strings, Cheez-Its, and bacon bits in a large microwavable bowl.

Melt the butter and pour over the snack mixture, stirring to combine.

Stir in the ranch dressing seasoning.

Add in the cheese.

Microwave the snack mixture for 3 minutes, stirring after each minute. Spread the mixture out on a foil-lined pan to cool.Loaded Baked Potato Snack Mix
