Banana Bars with Cream Cheese Frosting

Every year for Thanksgiving, my mom makes a recipe for pumpkin bars with a cream cheese frosting, and they are out of this world. I was thinking about those bars a few days ago, and while it’s no secret that I can’t wait for fall to get here, I’m still not quite ready for all things pumpkin flavored. As a result, I figured that a banana bread version would be the perfect not-yet-fall dessert. The verdict is in – the banana version is a hit!

Makes about 36 bars

ingredients:
for the bars:
1/2 cup butter, softened
2 cups sugar
3 eggs
3 medium bananas, mashed
1 tsp vanilla
2 cups flour
1 tsp baking soda
pinch salt

for the frosting:
1 pkg (8oz) cream cheese, softened
1/2 cup butter, softened
4 cups powdered sugar
2 tsp vanilla

instructions:
Cream the butter and sugar in a large bowl, until creamy.

Beat in the eggs, bananas, and vanilla.

Stir in the flour, baking soda, and salt.

Spread the batter evenly onto a foil-lined 15x10x1 inch baking pan.

Bake at 350 for about 20 minutes, or until a toothpick inserted in the center comes out clean.

Cool on a wire rack, and make the frosting. Beat the cream cheese and butter until fluffy.

Add in the powdered sugar and vanilla, beating until smooth.

Frost the bars once they have fully cooled. 

Cut into bars and enjoy!
