Bruschetta

You know how in every relationship each person seems to have a set of things that they really excel at? Sure, there might be some overlap, but overall, TJ and I each have pretty defined roles that we’ve naturally fallen into as a couple. TJ is neater than I am, so he usually does most of the picking up around the house, while I do the cooking (with the exception of hashbrowns – TJ makes the BEST hashbrowns around).

Every once in a while though, TJ blows me away by making something amazing for us to eat (like Garbage Plates!). The first time I ever had any type of bruschetta, TJ made it for a game night with some of our friends. I’m not a big fan of tomatoes, so I was skeptical about trying it, but as soon as I took my first bite, I was hooked! The tomatoes and onions go together wonderfully, and the crunchy piece of toast is the perfect vehicle for getting it all into your mouth. Then topping it off with a slice of mozzarella cheese just takes it over the top.

I’ve learned to replicate this dish fairly well, but it just can’t quite compare to when TJ makes it for us. He may not cook a lot, but when he does, it’s amazing!

Makes 8 pieces

ingredients:

8 pieces french bread, thinly sliced
olive oil, for brushing
1/4 cup white onion, thinly sliced
1/4 cup diced tomatoes
8 slices mozzarella cheese

instructions:
Brush a little olive oil on each piece of bread.

Top each piece of bread with the onion.

Then add the tomatoes.

Top each piece of bread with the mozzarella cheese.

Bake at 350 for 5-7 minutes, broiling for the last minute, until the cheese is melted.

Enjoy!
