Basic Breakfast Sandwich

We’re back home after our quick trip to upstate New York! We had so much fun relaxing, and I can’t wait to share some pictures and stories from our trip in a post later this week. While we were at TJ’s mom’s house, we noticed that she had some egg fry rings (similar to these), so we decided to use them craft up a simple breakfast sandwich. For some reason, our eggs didn’t stay completely in the fry ring, but no worries, perfection isn’t necessary for these little goodies. The ingredients list is pretty generic, since we just threw them together on the fly, but I still wanted to share them with you because they are so good! This sandwich is about as basic as they come, but you could absolutely spice it up by adding some bacon or sausage.

ingredients:
2 whole wheat sandwich thins
2 eggs
thinly sliced white cheddar cheese
pepper and garlic salt, to taste

instructions:
In a small bowl, combine one egg, pepper, and garlic salt. Mix thoroughly.

Place two thin slices of cheese in with the egg.

Pour the egg mixture into one of the fry rings, and repeat the first step with the second egg. (Egg leakage – yikes!)

Cook over medium heat until the eggs are fully cooked. Place the egg on one side of the sandwich thin, and place two thin slices of cheese on the other side of the bread.

Close the sandwich and enjoy!
