Cheese, Potato, and Smoked Sausage Casserole

When the cold wind is blowing outside, my idea of a perfect dinner is a hearty, warm meal that fills you up. On nights like that, this casserole is perfect. It almost reminds me of a soup, the way it warms your whole body after the first bite. This would be an ideal dinner when you’re snowed in during a blizzard.

ingredients:

3 russet potatoes
1 smoked sausage
4 tbsp butter
4 tbsp flour
2 cups milk
1/2 tsp salt
1/4 tsp pepper
1/4 tsp garlic powder
1/4 tsp onion powder
1/2 lb Velveeta cheese, cut into cubes
1/2 cup shredded taco cheese
1/4 tsp paprika

instructions:
Boil the potatoes until tender.

While the potatoes are boiling, cut the sausage in half, lengthwise, and slice into small pieces. Cook in a skillet until slightly brown, about 12 minutes.

Once the potatoes are finished cooking, cut them into cubes and place in a casserole dish.

Throw the smoked sausage in with the potatoes, and mix together.

In a small saucepan, heat the butter, flour, milk, salt, pepper, garlic powder, onion powder, and Velveeta cheese over medium heat. Whisk frequently, until melted and creamy.

Pour the cheese mixture over the potatoes and smoked sausage.

Top with the taco cheese and the paprika.

Bake at 350 for 30-35 minutes, or until the cheese is bubbly.

Serve, and enjoy!

    I have everything necessary for this recipe except the cheeses so I see a supermarket run in my future – delicious!
