Taco Bites

After a brief hiatus last week, Football Food Friday is back, with one of my favorite snacks of all time. Let’s all just get real for a second – tacos are one of the best foods of all time. Is there anyone who can honestly disagree with that? In our house, we love tacos so much that we get them every Tuesday, without fail. We’ve been going to the same taco place every week for almost two years now. We missed one time, because we were on our honeymoon, but we made up for it by going the day after we got back. So, yeah, you could say we love tacos.

Here’s the thing though, sometimes one taco a week is not enough – especially during football season. So, I made these little taco bites for us a couple Sundays ago, and they were awesome. They’re not exactly bite size. Maybe more like four-bite size? But they’re definitely small enough that you can justify eating a couple of them in one sitting. Makes 12

ingredients:
24 wonton wrappers
1 lb ground beef
1 pkg taco seasoning
1/2 cup Mexican cheese
salsa, for topping
sour cream, for topping

instructions:
Cook the ground beef over high heat until fully cooked, then drain.

Add in the taco seasoning and mix well.

Spray a muffin tin with cooking spray, and place a wonton wrapper in each cup.

Spoon ground beef into each cup.

Top each cup with another wonton wrapper, and fill each one with the remaining beef.

Top each one with cheese.

Bake at 425 for 5-8 minutes, until the wontons are cripsy and golden brown.

Top with salsa and sour cream, then enjoy!

    I have to try these! Not sure if I can find wonton wrappers in England though? Ill just have to see if I can find a recipe and make them myself 🙂 Thanks for the inspiration!
